Summer is the perfect time to engage your little ones in the kitchen and have some fun while creating delicious and healthy treats. 

In this blog post, we’ll share two simple and mouthwatering recipes that will keep your kids entertained and satisfied. 

Get ready to embark on a culinary adventure with watermelon pizza and two-ingredient mango coconut popsicles. 

These recipes are not only delightful but also packed with nutritious ingredients that will make both kids and parents smile.

 

Recipe 1: Watermelon Pizza

Ingredients:
  • 1 large watermelon
  • 1 can full-fat coconut milk 
  • Fresh fruit (sliced strawberries, blueberries, raspberries)
  • Fresh mint leaves

 

Instructions:
  1. Begin by chilling a can of coconut milk in the refrigerator overnight.
  2. Slice the watermelon down the middle and cut a large round piece about 1.5 inches thick. This will serve as the base of your “pizza.” Proceed to cut the round slice into triangle-shaped slices.
  3. Create the coconut whipped cream by scooping out the hardened coconut cream from the can and placing it in a mixing bowl. Set aside the watery part for other uses, such as adding it to smoothies. Use a hand mixer to whip the coconut cream for a few minutes until it achieves a whipped cream-like consistency.
  4. Take each watermelon slice and generously spread some coconut cream on top.
  5. Decorate your watermelon pizza slices with slices of fresh fruit and sprinkle some fresh mint leaves for added freshness.
  6. Dive into the vibrant flavors and refreshing goodness of your homemade watermelon pizza!

 

Recipe 2: 2-Ingredient Mango Coconut Popsicles

Ingredients:
  • 16oz frozen mango
  • 1 can coconut milk

 

Instructions:
  1. In a blender, combine the frozen mango and three-quarters of the coconut milk. Blend until you achieve a smooth consistency.
  2. Take popsicle molds or paper cups and roughly scoop the mango puree into them.
  3. Spoon the remaining coconut milk into each cup to fill the gaps around the mango. This will create a beautiful swirl effect once frozen.
  4. Insert popsicle sticks into the middle of each cup. Place the molds in the freezer for approximately 4 hours or until the popsicles are completely frozen.
  5. Indulge in these delightful mango coconut popsicles and savor the tropical flavors of summer.
