St. Patrick’s Day Recipes

Are you looking for some fun GREEN recipes to make with your kids this year for St. Patrick’s Day? Look no further than this post because I am sharing two of my favorite, healthy recipes that my kids love to eat and drink on St. Patrick’s Day: Green Lemonade and Protein-Packed Green Pancakes. 

And best of all, both of the recipes in this post are free of gluten, dairy, soy, and artificial flavors and colors. 

Many green recipes use artificial colors, but not me! 

I hope you enjoy these adhd friendly recipes as much as my family does. 

 

Green Lemonade Recipe: 
Ingredients: 
  • 3 ½ cups water 
  • 1 cup baby spinach
  • 2 lemons (juiced) 

Instructions: 

☘️Combine all ingredients in a blender and blend until well incorporated. Enjoy!

Notes: 

*Best enjoyed the same day. Refrigerate in an airtight container for up to three days if desired. 

*One serving equals approximately two cups. 

*Want more flavor? Add cinnamon, cucumber, kiwi, chia seeds, honey, or maple syrup.

Green Protein-Packed Pancakes: 
Ingredients:
  • 2 cups Gluten-Free Oats
  • 2 cups Baby Spinach
  • 1 cup Oat Milk (plain, unsweetened)
  • 1 ½ cups Unsweetened Applesauce
  • 2 Eggs
  • 2 tsp Baking Powder
  • 2 tbsp Avocado Oil for cooking
Instructions: 

☘️ Add the oats to a blender and blend into a flour consistency, about 30 seconds. Add the baby spinach, milk, applesauce, egg, and baking powder. Blend until smooth, scraping down the sides as needed.

☘️ Heat the oil in a pan over medium heat. Pour 1/4 cup of the batter at a time and cook for two to three minutes per side, or until cooked through. Transfer to a plate. Repeat until all the batter is used.

☘️Divide the pancakes onto plates, serve with a drizzle of pure maple syrup, and a rainbow of fresh fruit. Enjoy!
