3 Gluten & Dairy Free Holiday Recipes

Who loves a good holiday recipe?! I sure do, especially when it’s also gluten, dairy, and soy-free. 

My team and I have put together 3 recipes for you that are all gluten-free, dairy-free, and (most importantly) DELICIOUS! 

 

?Gluten-Free Vegan Cinnamon Rolls 

Ingredients: 
  • ¾ cup Unsweetened Almond Milk
  • 2 T Apple Cider Vinegar 
  • ¼ cup Maple Syrup (divided) 
  • 3 cups Almond Flour 
  • 2 cups Tapioca Flour (plus more for work surface) 
  • 1 T Baking Powder 
  • ½ t Baking Soda 
  • 2 T Coconut Sugar
  • 1 T Cinnamon 
  • 6 ounces Vegan Cream Cheese (room temperature)
Instructions: 
  1. Preheat the oven to 350°F. 
  2. Line a baking sheet with parchment paper.
  3. In a bowl, whisk together the almond milk, apple cider vinegar, and half the maple syrup. 
  4. In a separate mixing bowl, combine the almond flour, tapioca flour, baking powder, and baking soda. 
  5. Add the wet ingredients to the dry ingredients and combine until the dough becomes soft and sticky. Set aside. 
  6. Lay a large sheet of parchment paper on the counter and sprinkle with tapioca flour. Roll out the dough into a flat rectangle about 1/4 to 1/2-inch thick. Sprinkle the cinnamon and coconut sugar generously overtop, then tightly roll the dough into a log, using the parchment to keep from getting sticky. 
  7. Using floss or string, slice the dough into 1 1/2-inch rolls. Transfer to the baking sheet and bake for 12 to 15 minutes, or until cooked through. Let cool for five minutes before icing. Whisk together the cream cheese and remaining maple syrup. Spread over the cinnamon rolls and enjoy!

 

?Chocolate Bark

Check out this delicious (and healthy-who would know they have superfoods in them?!) chocolate bark. 

This recipe is filled with super seeds. Your kids will have no idea they are eating healthy superfoods when they eat this! Make sure and use dairy free chocolate to keep this dairy-free.

Ingredients: 
  • 2 ¾ ounce dark chocolate (ensure dairy free) 
  • 2 T coconut oil 
  • ¼ c pumpkin seeds 
  • ¼ c sunflower seeds 
  • 2 T hemp seeds 
Instructions: 
  1. Line a baking sheet with parchment. 
  2. Add water to a medium saucepan and place a smaller pot on top, ensuring the water is not touching the bottom of the smaller pot. Bring water to a boil, then reduce heat to low.
  3. Add the chocolate and coconut oil to the top pan, and stir occasionally until the chocolate has melted completely.
  4. Remove from heat and stir in the seeds to the chocolate. Mix well. 
  5. Transfer the chocolate and seeds to the prepared parchment paper and spread into an even layer. Place the bark in the freezer for about 30 minutes or until solid.
  6. When solid, break into pieces and store in an airtight container in the freezer or fridge until ready to eat. Enjoy!

 

Mulled Apple Cider 

One of my favorite things about winter is hot apple cider. 

This recipe is like Christmas in a cup!  

Ingredients: 
  • 3 quarts apple cider 
  • 2 T star anise (whole) 
  • 5 cinnamon sticks
  • ½ cup frozen cranberries 
  • ½ navel orange (sliced) 
Instructions: 

Combine all ingredients in a large saucepan over medium/high heat and simmer. Turn heat to low and simmer for 30 minutes. Enjoy!
