Gluten free muesli bars – Yummy, chewy & simple

My son loves gluten free muesli bars, however, a lot of the store bought varieties are filled with lots of sugar, artificial flavors and colorings and just are not that nutritious.

I have never been a big baker so I wanted to find a recipe for gluten free muesli bars that was simple and not too time consuming and I think I have found just that!

Now to the fun stuff – the yummy, chewy, dairy free, gluten free muesli bars!

INGREDIENTS

INSTRUCTIONS

  1. Preheat the oven to 320F degrees;
  2. Line a rectangular slice tin with baking paper;
  3. Leave some paper hanging over the edge so that the bars will be easier to remove from the pan;
  4. Melt the coconut oil, nut butter and rice malt syrup on medium on the stove for 2-3 minutes stirring occasionally;
  5. Add in the salt, cinnamon, brown sugar and vanilla and mix until the sugar has dissolved. Pour into a large bowl;
  6. Add the oats, flour, coconut, seed and nut trail mix and dried fruit and stir well until all ingredients are full covered;
  7. Add the puffed rice and cacao nibs and gently mix together;
  8. Press the mixture firmly and evenly into the pan;
  9. Bake for approximately 30 minutes or until the edges are golden brown;
  10. Cool completely before removing from the pan and cutting into bars.

I totally hope you enjoy these as much as my family does. One thing important to note….these will disappear quickly so be sure to put some aside for you to enjoy!
